Quality coffee, much like fine wine, must be grown in specific regions with specific soils and climates. The Dipilto
region of Nueva Segovia Nicaragua, where Café de Mi Abuelo is grown, is renowned as one of the best coffee growing regions in the world. This shade
grown, High Altitude, Arabica coffee is grown and matured slowly to take maximum advantage of these premiere growing conditions. This results in a
coffee that has a sweet, balanced, rich, full bodied flavor with hints of floral and citrus flavors without the sharp acidic after-tastes found in
coffees from less favorable coffee growing regions.
Coffee grown in this high altitude, under the shade of this dense forest region naturally results in low yields and low availability of this
very special coffee. Therefore the Café de Mi Abuelo bean is hand picked one bean at a time with the coffee plant and the land it grows from
nurtured and cared for with great care and respect. Because of this low yield Café de Mi Abuelo is only offered in limited amounts.
The cascara - the skin of the bean - is used to create mulch for fertilization of the coffee forest. The beans are
spread out to dry on tile floors specially made for Café de Mi Abuelo coffee. Once dry, the coffee beans are hand sorted for defective beans and
impurities. Only upon completion of all these steps is the green Coffee of My Grandfather ready for roasting.
For all of these reasons, Café de Mi Abuelo is recognized and certified as one of the best coffees of Central/South America and is a consistent top
selection in the annual Cup of Excellence Competition.
